Guests fortunate enough to secure a reservation at Virgilio Martínez’s fine-dining establishment, Central, located in Lima, Peru, are treated to a tasting menu featuring rare ingredients sourced from remote areas of the country.
Central was acclaimed as the world’s best restaurant in 2023 by the prestigious World’s 50 Best list. The extensive tasting menu, inspired by Peru’s natural landscape, includes exotic ingredients such as octopus, Amazonian fish, coca leaves, river snails, sweet lemon, crab, and squid.
However, attendees of Anant Ambani and Radhika Merchant’s extravagant wedding didn’t need to travel to Peru to enjoy Virgilio Martínez’s culinary creations. The affluent Ambani family brought the renowned chef and his team to Mumbai to impress their guests. For the Gujarati wedding, Martínez designed an entirely vegetarian menu.

The menu featured eight options, including dishes like “Cashew roll, mountain chimichurri, fresh cheese”, “Extreme altitude seeds, smoked tomato” and “Amazonian cassava textures, coconut milk.”

The menu prompted a variety of amused reactions, with many people baffled by the dishes.
“All this is good. But I am not able to understand what 50% of dishes mean,” commented one person. “I just want to know what is Pistachio Tigers milk,” another remarked.
“Indian vegetarians like, what? No Paneer?” questioned one X user. Others humorously noted the absence of Indian staples like paneer and dal from the menu.
Martínez was among several world-renowned chefs who catered the high-profile wedding, which has been marked as one of the most expensive weddings in history. The guest list included notable figures such as former UK PM Boris Johnson, reality TV stars Kim Kardashian and Khloe Kardashian, wrestler John Cena, Bollywood A-listers Shah Rukh Khan, Salman Khan, Amitabh Bachchan, Priyanka Chopra, and many more VIPs.
According to a report on the news website Peru21, Martínez was accompanied by a team of 13 people in Mumbai.
