Simple and an interesting Salad with Indian flavours. Filling too. Can be had as a complete meal with enough fibre, protein, carbohydrates, vitamins, minerals, micronutrients and antioxidants.
Ingredients
Sweet Potato 3 or 4 ( medium size )
American Corn 1 cup
Pomegranate arils 3/4 cup
Coriander leaves 1 tb sp
Lemon 1 medium sized
Tamarind chutney 2 tb sp
Salt to taste
Red pepper powder to taste
Preparation
Boil the sweet potatoes till tender
Cool and peel off the outer skin
Cut into thick round slices
Steam the American Corn and cool
In a salad bowl add sweet potatoes, corn and pomegranate arils and mix
Add salt and red pepper powder to taste and toss
Squeeze the lemon juice into the salad and add the tamarind chutney and toss well
Adjust the seasoning according to taste
Garnish with fresh coriander leaves and serve
Can be made without the tamarind chutney
